This is my favorite thing to come out of finding new uses for peanut butter. I thought this sounded sooo delicious and I found a recipe I had all the ingredients for.
First I baked a pie crust. I have these great ceramic beads that fill a pie plate and it makes baking a crust without filling super easy.
Next I beat together an 8oz brick of cream cheese and 3/4 cups of white sugar. Then I beat in 1 & 1/2 cups of peanut butter until it was smooth. I pulled the bowl off the mixer and folded in one container of Cool Whip. I then filled the pie crust with the mixture and topped it with half of another container of Cool Whip. It chilled overnight and was Oh So Yummy!
Next time (and there will be a next time) I think I'll sprinkle peanut butter chips on top. The recipe I found suggested a chocolate sauce drizzle. Some caramel might be good, too. OOH! Or chopped up Reeses's Peanut Butter Cups. But I don't normally keep those around because then I would eat them. Boo. It would have to be a special purchase of one candy bar.
