Freezer Meal Swap - Chicken Taco Soup

I participated in a freezer meal swap a few weeks ago.  This is one of our family's favorite meals so I always feel good making it for other people. Click here for the original recipe.  I modified a bit to use what I had.

First I assemble the ingredients:

Taco Seasoning - including some received at a Christmas gift exchange
Black Beans - to be cooked, cheaper than canned
Chopped Onions - that I threw in the freezer a while back when we were leaving town for holidays
Fresh Onions - because the frozen ones weren't enough
Frozen Corn - cheaper than canned
Tomato Puree, Organic - picked up for $.50/can this fall at Champion Foods
Chicken, shredded - Cooked up a couple days beforehand and shredded
Red Beans - to be cooked, cheaper than canned
Frozen, Diced Tomatoes - from my summer vegetable garden

After the beans were cooked, I just started measuring and filling up gallon Ziploc freezer bags.

Here is the finished product with cooking instruction and ingredient list attached.  I like to include the ingredient list for anyone with allergies/sensitivities.


I still don't know what I'm making next time, but I definitely want to make a dent in the pantry and/or freezer!
