Dairy-Free Dinner - Beef Stroganoff & Zucchini

So I tried beef stroganoff the other night with dairy alternatives.  We found a nice texture tofu sour cream and I thought it might work.  I used flour with the meat's juices to make the sauce start and added almond milk.    I didn't like how it tasted but my kids all ate it without complaint.  I got a recommendation to try rice milk in creamy sauces for a flavor closer to milk so I'll give that a go next time. 

I also made sauteed zucchini with onions, corn, real garlic, salt & pepper.  DH lurrrrves sauteed zucchini and I love to make it for him.
